I love salads of all kinds, and I was particularly happy with how this turned out. The dressing was perfect. I made it for my family for Saturday lunch, as an accompaniment to honey, lime, and sriracha chicken.
I love this salad for many reasons:
- It’s versatile: it can be enjoyed on it’s own, in a pita wrap (which my brother thoroughly enjoyed), or in a lettuce wrap (as a low-carb version)
- It’s colorful: I have a weakness for colorful dishes
- It’s healthy
- It’s so easy to make
- It has PEANUT BUTTER
- And it’s really delicious!
I’m happy to say that this was a hit, and I’ll definitely be making this again. I doubled up on the amount for the dressing and it turned out just right.
